OUR PIZZA STORY
AUTHENTIC SOURDOUGH PIZZAS
Made with the finest ingredients and wood-fired to perfection.
We make all of our pizzas from a natural biga we call the mother dough. Kneaded by hand using only the finest classic ingredients, Molina Caputo flour from Naples, San Marzano D.O.P. tomatoes from the Valle del Sarno and Fiore de Latte mozzarella, and Grana Padano cheeses.
After being lovingly hand-stretched and prepared at our custom pizza station, all of our pizzas are cooked to perfection in our wood-fired pizza oven, reaching over 700 degrees centigrade in the dome creating the signature leopard spots on the dough crust.
